Thanks to Sugar and Kol for initiating Tasty Tuesdays, today is our twenty-seventh participating post!
Mom loves to roast veggies. This weekend, she chose to steam broccoli and cauliflower, just for a change. JJ and I, Mom’s faithful Kitchen K9s, love when Mom preps crucifers (VBP – Vocab building project) because she lets us do QC on both the raw and cooked veggies. (after cool down of course, as long as recipe is K9 safe!)
In keeping with our ode (VBP) to fall, we’re offering TWO (yes, we’re just that excited and generous to share with you!) ideas.
Broccoli Slaw with Cranberries
- 1 bag ready-cut broccoli slaw mix or 2 heads broccoli , heads removed, stems julienned
- 2 carrots , julienned
- 1/2 red onion , julienned
- 1/2 cup dried cranberries
- 1 cup low-fat mayonnaise
- 1 cup low-fat sour cream
- 1 Tbsp. lemon juice
- 1 tsp. honey
- Kosher salt and freshly ground black pepper
- 2 Tbsp. chopped fresh flat-leaf parsley
- Extra-virgin olive oil
Roasted Broccoli with Sriracha, Honey, and Tamari
- 1 small crown of broccoli, cut into bite size floret
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon Sriracha
- 1 tablespoon honey
- 1/2 teaspoon black pepper
- 2 Tbsp sesame seeds
- 4 green onions, sliced thinly
- Optional: Red chili flakes
Directions:
Preheat oven to 400 degrees. Line a baking sheet with parchment.
In a small bowl, mix together tamari, sesame oil, honey, Sriacha and black pepper. Pour mixture over the raw broccoli and toss to coat.
Spread broccoli pieces in an even layer across the baking sheet. Roast for 8-10 minutes, until broccoli is tender (and the outer edges are beginning to turn dark brown).
Remove broccoli from the baking sheet to a bowl. Toss with sesame seeds and green onions. Taste and adjusting seasonings if necessary. Serve immediately.
Another great, broccoli day.

the roasted broccoli sounds INSANELY GOOD! Mom roasts broccoli and cauliflower with olive oil but she sure doesn’t get as creative as you!

I’ll surely try the first recipe, the second I don’t know, I’m not a fan of cooked broccoli, I should say tender broccoli, I like crunchy, just like carrots.

So funny, Mom is the opposite, she does not consume raw broccoli, just can’t get the taste for it… she prefers it steamed or roasted! Carrots… she likes raw and cooked!

Yes, Mom’s partial to the roasted recipe, too. Usually, she sprinkles a little sea salt, freshly ground pepper blend and that’s that. She’s eager to try this as well. 🙂
Oh yes, JJ and I begged for more, Mom told us too much would hurt our tummies.
Blueberry will eat broccoli – but it has to be cooked and she has to see me eating it to prove to her that it is actually food. lol

No worries, replace with: raisins, currants, chopped dried papaya or pineapple or apple, let your creative ideas take over!!! That’s why Mom loves teaching people about the Power of Kitchen… we may present an idea, however, then you can customize to your palate! 🙂 Mom does not enjoy raw broccoli, so, for this recipe, she would blanch or lightly steam and then make it!

We loooooove broccoli & cauliflower roasted. It’s one of our very favourite treats! did you know that broccoli should be no more than 10% of your diet? That’s a fun fact the Mama learned! She can’t wait to try your coleslaw.

I keep refusing vegetables. Zac ate them but then he’d eat anything! I am more discerning, though I did used to eat cooked carrots in my fish dinners that was because I couldn’t filter out the tiny bits!

Hi sweet Jetty – more yummy recipes – give big thanks to your Mom! I make garlic broccoli often, quick fry it in olive oil and garlic until kinda carmelized and delish! But it does stink up the house alot!!

Aww shucks, I’m blushing again…
JJ is barking like a wild woman with all the lightening and thunder. Uh, Miss Wendy? I was not so well behaved tonight on our walk. I saw the sky light up 1/2 way and then wouldn’t budge. Miss Mary Ann had to put the flashlight under my chinny chin chin to do… Spooky Jetty and say sweet things to me to get me to keep walking. Mom arrived home soaked in sweat! 😦 Hope Cassie is ok.
