Tasty Tuesday – Better Late Than Never

Thanks to Sugar and Kol for initiating Tasty Tuesdays, today is our seventeenth  participating post!

Can you believe that the sky has turned dark grey and the thunder has begun?  I’m parked under Mom’s desk while JJ paces and frets.  Mom asked Ruby and Rachel to give us lots of lovies so she can transcribe this post!  Heaven knows how long the power will last!

Have I mentioned how much JJ and I LOVE tomatoes?  We particularly enjoy the pop of grape or cherry tomatoes in our mouths.  We sit with the ultimate good behavior waiting for a toss from Mom.  We both like cream cheese too! (me more than JJ…)  When Mom offered each of us half a bocconcini (bite-sized fresh mozzarella balls), I could not believe our good fortune.  The following recipe uses both ingredients.  When Mom demonstrated this salad, the bowl came home empty… I only licked the teensy leftover goodness when Mom loaded the dishwasher.

Mini Caprese Salad

Ingredients

  • 1 lemon, juiced
  • 1 small clove garlic, grated or minced
  • 1 cup basil leaves, about 20 leaves, plus a few for garnish
  • 1/3 cup extra-virgin olive oil
  • 1 pint heirloom cherry tomatoes, multi colored if available, halved
  • 1 cup bocconcini (bite-sized fresh mozzarella balls), drained, halved
  • Salt and freshly ground black pepper

Directions

Combine lemon juice, garlic, basil in food processor or blender, process and stream in extra virgin olive oil to form a smooth dressing. Combine tomatoes, cheese and dressing in a bowl and season with salt and pepper, to taste. Garnish with a few torn basil leaves.

Another great, cheesy, day.

  1. Thanks so much for your kind comments on our muffin recipe. We really appreciate it. Caprese salad is great and very healthy. Mom is good with the health for us, but not so good with healthy for her and dad.

    In regard to your comment about pineapple: I never heard that dogs cannot have pineapple. On the contrary, people feed pineapple to their dogs who well, eat their own poo to stop them from…you know. It seems dogs like pineapple the first time around but not when it is in their poo. We love it here…you should give it a try!

      Oh that’s pawesome. Excuse me a moment. MOM – Oz said that JJ and I can safely eat pineapple, can we try some? Can we? Can we?

      The reason Mom had concerns was the thought that pineapples might be considered a citrus fruit and she knew citrus was on the no no list for us.

      Great strategy about the pineapple for K9s with that issue.

  3. My Humom daddie is Italian ( english born ) can’t speak a word…but he can cook..boy he’s good.. I’ms givin him this recipe..Fank yoo Jet, weee’s got motzeralllllla balls in the fridge 🙂 NOM NOM. Oh wee’s the same…I rush to the dishwasher to lickie the plates before it’s shut and that funny wurring sound starts…BOL xxxxxxxxxxxxx Alfie wants to nose if yooo’s takin good care of his girlfurriend??? x

  4. Hi sweet Jetty – we’re back! had oodles of fun with the in-laws, took walks, read books, ate lotsa yummy food, saw the new Batman movie and just enjoyed each other. They are the kindest, most graceful, loving and supportive people I have ever met!

    I hope you had a good few days Jetty – I see you;ve posted a very yummy recipe – tomatoes are one of my fav foods! love em to bits mixed with mozzarella cheese balls!

    I think I read you lost your power , sorry about that, Mr David told me there were a few big boomer storms. and I like the story of mom dogsitting for Austin – so glad he got along with JJ and I;m sure he would get along with you also – who would’nt love you???

    well off to continue getting he house back to order, laundry, etc.

  5. Sounds yummy. I make a salad like that when I get fresh tomatoes and basil. Usually I just put a pre-made vinaigrette on it because I am lazy. 🙂 Your dressing sounds good.

  6. Hey Jet, I’m just making some rounds while on holidays. I’m glad to here you had some power (if even for just a while). Hopefully it lasts. I love caprese salad and this sounds so yummy! You must love it when your Momma brings stuff home, even if it is just a bowl to lick out. 🙂

      Phew, good to know you were on holiday, we thought so, but good to know for sure.

      Uh… Miss Janet? For 6 months of the year Mom usually works at the farmers market. We know that when the garage opens, dirty bowls are on teh way for tasting!

      I watched my golden sister, Koko, may she be frolicking over the rainbow bridge, eat all sorts of veggies and fruits. Now I love them, too! 🙂

      When Mom teaches children, she always compares the veggies they eat with the veggies we Kitchen K9s eat and we ALWAYS win! 🙂

      Yup, power outages bum me out; I get a bit frightened. Right now, Mom doesn’t think Austin can handle another manly man… he needs a bit more practice. Mom’s been working with him around his neighborhood with dogs behind fences. She makes him sit and pay attention to her, and then they move on.

      Hope your house is back in order and you’re caught up Miss Wendy.
